Picnic Drumsticks // Summer's Best, Episode: Island Picnic

1/2 cup fish sauce
1/4 cup olive oil
1/4 cup soya sauce
1 tbsp freshly ground black pepper
8 chicken legs
1/2 bunch cilantro, chopped
4 green onions, chopped
1 lemon
Instructions:

1. In a bowl, whisk together fish sauce, oil, soya sauce, juice of 1/2 lemon and ground pepper. Pour over chicken legs. Refridgerate for 1 hour. Preheat the oven to 350º F.
2. On a lined baking tray place the drumstick and bake for 25 minutes, turning once. Allow to cool.
3. In a bowl, combine chopped cilantro, onion, salt and pepper. Add the juice of 1/2 lemon and some olive oil.
4. Place cooled chicken legs in a resealable plastic bag with fresh herb mixture. Pack for picnic lunch! Serves 8.
