5 lb prime rib roast or beef strip loin 4 tbsp dry mustard powder 1 tbsp cumin 1 tbsp oregano 1 tsp black pepper 3 tbsp canola oil 3 cooking onions, sliced 12 cloves garlic, finely chopped 4 Chipotle peppers in Adobo sauce 2 tsp sambel olek 2 tbsp steak spice 1/2 cup molasses 1 1/2 tsp salt 1 1/2 cup maple syrup 1/2 cup malt vinegar 1 cup ketchup 1 1/2 cup water 1 tsp cinnamon 1/4 cup red wine vingar 1 tsp chili powder pinch brown sugar
1. Combine spices and rub into beef. In a frying pan, sauté onions and garlic.
2. Place the remaining ingredients into a large bowl and mix, adding the onion and garlic. Blend until smooth.
3. Brush the sauce over the roast and place on the grill at medium to low heat for about 2 hours, turning occasionally and continually basting with sauce.
4. Cook until internal temperature reaches 160ºF or medium rare.
