Carmelized Smashed Potatoes // Summer's Best, Episode: Wild Edibles
IngredientsInstructions:
2 garlic bulb 1 onion 1/4 cup olive oil 2 lb potatoes salt
1. Place the potatoes on foil, drizzle with oil and sprinkle with salt.
2. Wrap in foil and roast on the grill for 30-40 minutes.
3. Peel off the loose layers of the garlic skin.
4. Slice off the top 1/2 inch of the garlic bulb and drizzle with 1 tablespoon olive oil, sprinkle with salt and wrap in foil.
5. Place sliced onions on foil, drizzle 1 tablespoon olive oil and add salt and wrap in foil.
6. Roast the garlic on the grill for 20 minutes or until soft.
7. Place the onions on the grill next to the garlic for 20 minutes.
8. Place cooked potatoes in a bowl and squeeze the roasted garlic on top and smash with a fork.
9. Top with caramelized onions.
