Banoffee Fool Dessert // Summer's Best, Episode: Cottage Spa Cuisine

Ingredients
8 digestive cookies 1/4 cup butter, melted 4 bananas 1/2 cup Banoffee curd or Dulce de Leche 2 cups whipping cream 2 cups custard, ready made 1/2 cup condensed milk shaved semi-sweet chocolate to garnish
Instructions:

1. Put the cookies in a bag and crush them using a rolling pin. Mix cookie crumbs with melted butter.
2. Slice bananas and mix with the Banoffee curd.
3. Whip cream to soft peaks and fold in the custard.
4. Spoon 1 tablespoon of crumb mixture into the base of 8 glasses. Spoon half of the Banoffee mixture between the glasses, followed by half of the custard mixture. Repeat these layers, reserving a few crumbs for the top. Drizzle the tops with condensed milk and chocolate shavings.
5. Chill until ready to serve. Serves 8.
