1 large eggplant 1 zucchini 1 red onion 2 sweet peppers (yellow/red/orange) 1 green pepper Italian salad dressing 1 bunch arugula goat cheese
1. Chop vegetables and toss in italian salad dressing. Grill the vegetables and put aside to cool.
2. Spread desired bread with goat's cheese and cover with arugula. Fill with grilled vegetables. Slice and serve. Serves 6.
