Fresh Fruit Pavlova // Summer's Best, Episode: Tastes of Cottage Country

Ingredients
4 egg whites 1 tsp cream of tartar 3/4 cup sugar 1 tsp cornstarch 1/2 tsp white vinegar 1 cup whipping cream 1 tbsp sugar 2 cup mixed berries, washed
Instructions:

1. Whip egg whites with cream of tartar until foamy. Gradually add sugar and whip until soft peaks, about 8 minutes. Fold in cornstarch and white vinegar.
2. Trace 3-inch circles onto a piece of parchment paper. Spread meringue to fit into circles.
3. Bake at 275°F for 90 minutes and allow to cool.
4. Whip cream to soft peaks and fold in 1 tbsp sugar.
5. Top Pavolvas with whipped cream and fresh berries. Serves 8.
