Quick Herb Bannock // Helena McShane
IngredientsInstructions:
3 cups all-purpose flour (750 ml) 4 tspbaking powder (20 ml) 3 tbsp granulated sugar (45 ml) 1/2 tsp salt (2 ml) 1 tspdried parsley flakes (5 ml) 1/2 tsp ground sage (2 ml) 1/2 tsp dried basil leaves (2 ml) 1/2 tsp garlic powder (2 ml) 1 1/2 cupscold water (375 ml)
1. Combine dry ingredients in mixing bowl. Mix well. Make a well in the centre. Pour in cold water and stir until a sticky dough is formed.
2. Turn out onto a floured surface and knead lightly 1 minute. Shape dough into a round cake about 9" (23 cm) in diameter and 3/4" (2 cm) thick on greased baking sheet.
3. Bake at 350°F (180°C) for 25-30 minutes, or until bottom is golden and toothpick inserted in centre of bannock comes out clean. Cut into wedges and serve warm. Makes about 12 servings.
Cottage Tips:
- Serve warm with butter and a selection of cheeses.
- Add 1?2 cup (125 ml) grated Cheddar cheese to the dry mixture.
- Vary the herbs in the bannock to suit the flavour of the rest of the meal. Try toasting leftover slices.
