GRAND PRIZE WINNER:

Flaming Chicken Satay // Peter King

Ingredients
1/2 cup lemon juice (125 ml) 1/2 cup chunky peanut butter (125 ml) 2 tbsp salt (30 ml) 2 tbsp granulated sugar (30 ml) 1 tbsp dry red chili flakes (15 ml) 1 tbsp ginger powder (15 ml) 5 cloves garlic, minced 1/2 cup chopped fresh parsley (optional) (125 ml) 4 large chicken breasts (2 lbs/1 kg), cut in 1" (2.5 cm) cubes
Instructions:

1. Combine all ingredients except chicken, mixing until smooth. Pour into a resealable bag. Add chicken cubes. Mix well to coat chicken with sauce. Refrigerate overnight.
2. Thread chicken cubes onto skewers, leaving no space between cubes but not too tightly.
3. Grill skewers over medium heat, turning occasionally for about 15 minutes or until chicken is cooked through. Makes about 10 skewers.

Cottage Tips:
  1. If you use wooden skewers, soak them for an hour in water to prevent burning.
  2. Try boneless chicken thighs instead of breasts.
