FIRST PRIZE:

Cranberry Orange Muffins // Susan Watson Cleveland

Ingredients
Cranberry Orange Sauce: 1 pkg fresh or frozen cranberries (340 g) 1 cupgranulated sugar (250 ml) 1 cupwater (250 ml) grated zest of 2 oranges
Muffins: 2 cups whole wheat flour (500 ml) 1 cupnatural bran (250 ml) 1/2 cup granulated sugar (125 ml) 1 tspbaking powder (5 ml) 1 tspbaking soda (5 ml) 2 eggs 1/2 cup margarine, melted (125 ml) 1 1/2 cups cranberry orange sauce (375 ml) (above)
Instructions:

1. Combine ingredients for sauce in a saucepan. Bring to a boil, then simmer, stirring occasionally until thickened, about 10 minutes. Set aside to cool.
2. Combine flour, bran, sugar, baking powder, and baking soda.
3. Beat eggs, melted margarine, and 11?2 cups (375 ml) cranberry orange sauce in mixing bowl. Add dry ingredients, stirring just until blended. Spoon into greased or paper-lined muffin pan.
4. Bake at 400°F (200°C) for 15-20 minutes, or until toothpick inserted in centre comes out clean. Makes about 2 cups sauce and 12 muffins.
