Banana Chocolate Chip Muffins // Natasha Benko
IngredientsInstructions:
4 large bananas, frozen 3 cups quick oatmeal (750 ml) 2 cups buttermilk (500 ml) 2 eggs 2/3 cup vegetable oil (150 ml) 1 1/3 cups brown sugar, packed (325 ml) 1 tsp vanilla (5 ml) 2 cups whole-wheat flour (500 ml) 2 tsp baking powder (10 ml) 2 tsp baking soda (10 ml) 1 tsp salt (5 ml) 1 cup semi-sweet chocolate chips (250 ml)
1.Thaw frozen bananas. Peel, then stir fruit until smooth in a large bowl. You should have about 1 3/4 cups (425 ml). Add oatmeal, buttermilk, eggs, oil, sugar, and vanilla. Mix well.
2.Combine remaining ingredients.
3.Add to banana mixture, stirring until thoroughly blended. Batter will be thin. Spoon into greased muffin cups.
4.Bake at 350°F (180°C) for 20-25 minutes, or until set and golden. Makes 2 dozen muffins.
Cottage Tips:
- Recipe can be halved if desired.
- Replace chocolate chips with peanut butter chips.
