COTTAGE LIFE RECIPE CONTEST WINNER, 2000

SECOND PRIZE:

Crozier Lake Shrimp Salad // Fran Stephen - Crozier Lake, ON

Ingredients 
1 cup mayonnaise (250 ml) 1 cup sour cream (250 ml) 2 tbsp tomato paste (30 ml) 1 tbsp lemon juice, freshly squeezed (15 ml) 2-5 dropsTabasco or hot sauce 1 Golden Delicious apple, peeled, cored, and diced 1/2 cup pineapple chunks (125 ml) 1/2 cup romaine lettuce, shredded (125 ml) 1/2 cup celery, chopped (125 ml) salt and freshly ground pepper, to taste 1 cup cooked salad shrimp (250 ml) cucumber and lemon slices
Instructions:

1. Combine mayonnaise, sour cream, tomato paste, lemon juice, and hot sauce. Mix well.
2. Stir in apple, pineapple, romaine, and celery. Season to taste.
3. Stir in shrimp. Spoon into wine goblets. Cover with plastic wrap and chill 4 hours to let flavours blend. Garnish with a thin slice of cucumber and lemon. Makes 4-6 servings.

Cottage Tips:
  1. If you can't find fresh shrimp, use good-quality, frozen, pre-cooked shrimp, defrosted and drained.
