THIRD PRIZE:
Bacon-Wrapped Jumbo Tiger Prawns with Cheese // Larry King - Ril Lake, ON
IngredientsInstructions:
15-20 jumbo tiger prawns or shrimp, uncooked 2 oz asiago cheese (60g) 1 lb bacon (500 g)
1. Cut down back of shrimp with a sharp knife and remove the black vein.
2. Cut cheese into slivers and stuff into opening along back of shrimp.
3. In a frying pan, partially cook bacon until about half done but still limp. Wrap a slice of bacon around the shrimp, holding the cheese in place. Secure the bacon with a toothpick.
4. Barbecue over medium heat for 5 minutes, turning often until the bacon is fully cooked and shrimp is pink. Makes 15-20 pieces.
Cottage Tips:
- Instead of using a frying pan, cook the bacon in the microwave for a few minutes, if you have one. This keeps it soft and makes for an easy cleanup.
