Tofu Marinade: 12 oz extra firm tofu 1 tbsp almond butter (15 ml) 1 tbsp low sodium soy sauce (15 ml) 2 tablespoons sesame oil (30 ml) 1 tbsp curry powder (15 ml)Stir Fry: 2 tbsp olive oil (30 ml) 2 tbsp butter (30 ml) 3 cloves garlic, minced 1 red onion 1 red pepper 2 carrots 2 heads of broccoli 1 tbsp tamari (15 ml) 1 bunch of fresh spinach
1. Cut tofu into cubes. Mix marinade ingredients well and marinate tofu an hour or over night.
2. Chop onion, red pepper, broccoli, and spinach. Grate carrots.
3. Heat butter and olive oil over medium high heat in a large skillet or wok.
4. Add all the ingredients together and toss till heated (about 6 minutes). Serves four.
