Not-for-the-faint-hearted Cheese Spread!

1 lb assorted ends of various firm cheeses (cheddar, parmesan, gruyere, blue, havarti etc) (425g)
1 garlic clove, chopped
2-3 tbsp unsalted butter (30-45 ml)
1/4 cup dry white wine (60 ml)
Freshly ground pepper
1/2 cup toasted walnuts, chopped (125 ml) (opt)

1. Remove hard rinds from cheeses and cut into small chunks. (yielding about 2 cups/500 ml). Toss in the food processor and add garlic, butter and wine. Combine and blend until smooth.
2. Taste and adjust texture and flavour. If the flavour is too overwhelming add a little fresh cream cheese or sour cream. Add some fresh chopped herbs. Add an extra kick with a dash of hot sauce, or some chopped jalapenos! Have fun!
