Wild Blueberry Melon Salad
Ingredients
2 cups (500 mL) Wild Blueberries
2 tablespoons (30 mL) sugar
Zest of 1 lime
1 ounce (28.4 grams) coconut, shredded (optional)
1 cantaloupe
3 tablespoons (45 mL) chopped pistachios
Fresh mint leaves for decoration
Preparation
Mix Wild Blueberries with sugar and zest of a lime and let defrost. Lightly roast the coconut chips in dry pan with no oil. Cool. Cut melon into thin pieces without the rind. Arrange melon and Wild Blueberries on a plate. Sprinkle with coconut and pistachios. Garnish with mint leaves.
Yield: serves 6.
Preparation time: approx 15 min plus time for defrosting
