Stuffed Mushrooms with Wild Blueberry Merlot Sauce
Dressing up stuffed mushrooms is easy to do with this savoury sauce. The fruity addition of wild blueberries to the mushrooms brings the two together. Look for mushrooms that are about 2 to 2 1/2 inches (5 to 6 cm) in diameter across the cap for best stuffers.
Ingredients
1 lb (500 g) large mushrooms (about 14)
1/4 tsp (1 mL) each salt and pepper
2 tbsp (25 mL) butter
1 shallot, finely chopped
1 large clove garlic, minced
1 tsp (5 mL) chopped fresh thyme
1/2 cup (125 ml) fresh breadcrumbs
1/3 cup (75 mL) freshly grated Parmesan
2 tbsp (25 mL) chopped fresh parsley
1/2 cup (125 mL) frozen Wild Blueberries
Blueberry Merlot Sauce
1 tbsp (15 mL) butter
1 small shallot, minced
1 tbsp (15 mL) granulated sugar
1 cup (250 mL) Merlot wine
1 cup (250 mL) frozen Wild blueberries
1 tsp (5 mL) cornstarch
1 tsp (5 mL) water
Choose 12 of the larger mushrooms and finely chop any remaining mushrooms. Remove stems from mushrooms and chop finely. Place mushrooms caps onto small parchment paper lined baking sheet and sprinkle with half of the salt and pepper; set aside.
In skillet, melt butter and cook shallot, garlic, thyme and chopped mushrooms for about 8 minutes or until softened and liquid evaporates. Stir in breadcrumbs, cheese, parsley, remaining salt and pepper until combined well. Gently stir in blueberries. Spoon filling into mushroom caps and bake in preheated 375 F (190 C) oven for about 20 minutes or until mushrooms are tender.
Blueberry Merlot Sauce: Meanwhile, in small saucepan, melt butter over medium heat and cook shallot and sugar for 3 minutes or until softened and slightly golden. Add wine and bring to boil. Boil for about 3 minutes or until reduced by about half. Add blueberries and return to the boil.
Dissolve cornstarch in water and stir into sauce and simmer for 1 minute or until slightly thickened. Serve with mushrooms.
Yield: 12 mushrooms.
