Balsamic Reduction Salad Dressing // Summer's Best, Episode: Todd

Ingredients
1 medium Vidalia onion 1 cup balsamic vinegar (250 ml) 1 tbsp Dijon mustard (15 ml) 1/2 cup olive oil (125 ml)
Instructions:

1. Grate onion directly into frying pan add balsamic vinegar and heat on medium, stirring until balsamic vinegar is reduced to about half.
2. Add Dijon mustard and olive oil. Whisk all and let cool. Drizzle over salad.
