Fried Goat Cheese Salad // Summer's Best, Episode: Craik
1 goat cheese log 4 egg whites 2 cups Japanese bread crumbs (Italian) (250 ml) 1/2 cup parsley (125 ml) 1/2 cup olive oil (125 ml)Instructions: 1. Mix bread crumbs and parsley and keep in separate bowl from egg whites. 2. Cut goat cheese into 1/2 inch discs. 3. Coat all sides of the goat cheese discs into the egg white then in the bread crumb mixture. 4. Place on plate and refrigerate for an hour to 8 hours. 5. When ready to fry. Heat oiled pan on medium high heat and fry till brown (3 min each side). 6. Serve atop mixed green and your favorite dressing. Serves 4. |
