In a saucepan, bring water and salt to boil over medium heat; stir in rice, cover and reduce heat to low. Simmer for 20 minutes, until rice is tender and liquid is absorbed. Fluff with a fork and allow to cool. 2. In a bowl whisk together lemon zest, lemon juice and oil. Stir in peas, green onion and mint. Fold in rice. 3. Serve at room temperature. Serves 8. |
