Fresh Pea and Rice Salad // Summer's Best, Episode: Island Burgers

Ingredients
2 cup long grain rice 2 2/3 cup water 1 tbsp lemon zest 3 tbsp freshly squeezed lemon juice 1/4 cup canola or olive oil 2 cup fresh peas 1/4 cup green onion, finely chopped 1 cup fresh mint leaves, roughly chopped salt to taste
Instructions:

1. In a saucepan, bring water and salt to boil over medium heat; stir in rice, cover and reduce heat to low. Simmer for 20 minutes, until rice is tender and liquid is absorbed. Fluff with a fork and allow to cool.
2. In a bowl whisk together lemon zest, lemon juice and oil. Stir in peas, green onion and mint. Fold in rice.
3. Serve at room temperature. Serves 8.
