SECOND PRIZE:

Quick Herb Bannock // Helena McShane

Ingredients
3 cups all-purpose flour (750 ml) 4 tspbaking powder (20 ml) 3 tbsp granulated sugar (45 ml) 1/2 tsp salt (2 ml) 1 tspdried parsley flakes (5 ml) 1/2 tsp ground sage (2 ml) 1/2 tsp dried basil leaves (2 ml) 1/2 tsp garlic powder (2 ml) 1 1/2 cupscold water (375 ml)
Instructions:

1. Combine dry ingredients in mixing bowl. Mix well. Make a well in the centre. Pour in cold water and stir until a sticky dough is formed.
2. Turn out onto a floured surface and knead lightly 1 minute. Shape dough into a round cake about 9" (23 cm) in diameter and 3/4" (2 cm) thick on greased baking sheet.
3. Bake at 350°F (180°C) for 25-30 minutes, or until bottom is golden and toothpick inserted in centre of bannock comes out clean. Cut into wedges and serve warm. Makes about 12 servings.

Cottage Tips:
  1. Serve warm with butter and a selection of cheeses.
  2. Add 1?2 cup (125 ml) grated Cheddar cheese to the dry mixture.
  3. Vary the herbs in the bannock to suit the flavour of the rest of the meal. Try toasting leftover slices.
