FIRST PRIZE: Cranberry Orange Muffins // Susan Watson Cleveland IngredientsInstructions: 1. Combine ingredients for sauce in a saucepan. Bring to a boil, then simmer, stirring occasionally until thickened, about 10 minutes. Set aside to cool. 2. Combine flour, bran, sugar, baking powder, and baking soda. 3. Beat eggs, melted margarine, and 11?2 cups (375 ml) cranberry orange sauce in mixing bowl. Add dry ingredients, stirring just until blended. Spoon into greased or paper-lined muffin pan. 4. Bake at 400°F (200°C) for 15-20 minutes, or until toothpick inserted in centre comes out clean. Makes about 2 cups sauce and 12 muffins. |
