SECOND PRIZE: Banana Chocolate Chip Muffins // Natasha Benko IngredientsInstructions: 1.Thaw frozen bananas. Peel, then stir fruit until smooth in a large bowl. You should have about 1 3/4 cups (425 ml). Add oatmeal, buttermilk, eggs, oil, sugar, and vanilla. Mix well. 2.Combine remaining ingredients. 3.Add to banana mixture, stirring until thoroughly blended. Batter will be thin. Spoon into greased muffin cups. 4.Bake at 350°F (180°C) for 20-25 minutes, or until set and golden. Makes 2 dozen muffins. Cottage Tips:
