Cheddar and Onion Toasties // Margaret Houston

Ingredients  
4 thick slices whole-grain bread butter, softened 2 1/2 cups extra-sharp cheddar cheese, grated (625 ml) 2 tbsp red or green onion, finely chopped (30 ml) 2 tbsp single-malt Scotch (30 ml) salt and freshly ground pepper, to taste
Instructions:

1. Butter one side of each slice of bread.
2. Mix cheese, onion, Scotch, salt, and pepper. Spread mixture on unbuttered side of 2 slices of bread. Put remaining slices on top, buttered side up.
3. Fry in cast-iron frying pan or on griddle, turning once, until golden brown and crispy on both sides. Cut into triangles and serve hot.
Makes 2 sandwiches.

Cottage Tips:
  1. There's lots of filling. You could make 3 sandwiches with it, if desired.
  2. Margaret suggests enjoying the Toasties on the dock with a wee glass of Scotch.
