SECOND PRIZE:
Tofu Burgers // Mary Bowlbey - Twelve Mile Lake, ON
Ingredients
3 lbsextra-lean ground beef (1.5 kg)
1 lb medium tofu (500 g)
1 egg white
1/4 cup oatmeal or bread crumbs (60 ml)
1 small onion, chopped
2 tbsp ketchup or salsa (30 ml)
3/4 tsp salt (3 ml)
1/2 tsp freshly ground pepper (2 ml)
Instructions:
1. Combine all ingredients in a large bowl. Mix well.
2. Shape into 16 patties. Wrap and freeze what you don't use immediately.
3. Barbecue to desired doneness. Makes 16 burgers.
Cottage Tips:
- The mixture also makes a great meatloaf. Pack into two 8" x 4" (20 cm x 10 cm) loaf pans and bake at 350ºF (180ºC) for 50-60 minutes.
