Southern Barbecued Chicken Pieces //

2 - 4 lbs. chicken pieces
1 cup southern barbecue rub (recipe follows)
Southern Rub
2 tbsp. salt
2 tbsp. sugar
2 tbsp. brown sugar
2 tbsp. ground cumin
2 tbsp. chili powder
1 tbsp. freshly craced black pepper
1 tbsp. cayenne
4 tbsp. paprika
Instructions:

Mix all ingredients together well. Rub the chickens with the barbecue rub. Place in the refrigerator for one hour. Place on barbecue. Sear chicken on each side (rotating to get that cross-grill look) and then place on top rack to finish. Thicker pieces can be placed on the bottom if there is crowding.

  1. Use a spray mister to douse small flare-ups on the outdoor grill or to cool a fire that's too hot.
