THIRD PRIZE:

Almost Healthy Cottage Cookies // Shelley Timms

Ingredients  
3/4 cup butter or margarine, softened (175 ml) 1/2 cup granulated sugar (125 ml) 1/2 cup brown sugar, packed (125 ml) 1 egg 1 cupwhole wheat flour (250 ml) 1 cup quick cooking oats (250 ml) 1 cup Red River Cereal (250 ml) 1 tspbaking powder (5 ml) 1 tspbaking soda (5 ml) 1 cup mini semi-sweet chocolate chips (250 ml)
Instructions:

1. Cream butter, sugars, and egg in large bowl until smooth.
2. Combine flour, oats, Red River Cereal, baking powder, and baking soda. Add to creamed mixture, mixing until thoroughly blended. Stir in chocolate chips. Drop dough by spoonfuls onto greased baking sheets. Bake in preheated 350°F (180°C) oven 9-11 minutes, or until light golden. Makes about 5 dozen cookies.


Cottage Tips:
  1. For softer cookies, chill dough 10 minutes before baking.
