Avocado Mango Salad // Fran Stephen

Ingredients 
2 ripe avocados, peeled, pitted, and diced 2 ripe mangoes, peeled, pitted, and diced 1/2 small red onion, finely chopped juice of 1 lemon 1 tbsp olive oil (15 ml) salt and freshly ground pepper, to taste Boston or leaf lettuce fresh chives or coriander (to garnish)
Instructions:

1. Combine avocado, mango, onion, lemon juice, olive oil, salt, and pepper. Mix lightly to thoroughly coat avocado with lemon juice.
2. Line salad bowl or individual salad plates or bowls with lettuce leaves. Mound salad in the centre. Garnish with chives or coriander.
Makes 4 servings.

Cottage Tips:
  1. Salad is best prepared just before serving.
  2. Ensure avocado is well coated with lemon juice to prevent discoloration.
