THIRD PRIZE:
Not-Just-Banana Muffins // Jim Proulx
Ingredients
1/4 cup margarine (60 ml)
3/4 cup granulated sugar (175 ml)
1 egg
1 cup mashed ripe banana (3 medium) (250 ml)
1 tspbaking soda (5 ml)
3 tbsp boiling water (45 ml)
1 1/4 cups all-purpose flour (300 ml)
3 tbsp 3-grain cereal (cracked wheat, whole flax,
and cracked rye) e.g. Red River Cereal (45 ml)
2 tbsp whole wheat flour (30 ml)
1 tbsp light buckwheat flour (15 ml)
1 tbsp crushed brown flaxseed (15 ml)
1 tspbaking powder (5 ml)
1/4 tsp ground nutmeg (1 ml)
pinchsalt
1/3 cup semi-sweet chocolate chips (75 ml)
1/3 cup flaked coconut (75 ml)
Instructions:
1. Cream margarine, sugar, and egg until smooth.
2. Stir in mashed banana. Dissolve soda in boiling water. Stir into creamed mixture.
3. Combine remaining ingredients. Stir into creamed mixture. Mix well. Spoon batter into greased or paper-cup-lined muffin pan. Bake in preheated 350ºF (180ºC) oven 20-25 minutes, or until toothpick inserted in centre comes out clean. Makes 12 muffins.
