Carol's Cottage Clafoutis // Carol Barkwell

Ingredients
1 tbsp butter (15 ml) 1 tbsp granulated sugar (15 ml) 1/2 tsp cinnamon (2 ml) 2 cups apples, peeled, cored, and thinly sliced (500 ml) 1/4 cup raisins (60 ml) 3 eggs 1/3 cup all-purpose flour (75 ml) 1/4 tsp baking powder (1 ml) pinch salt 1/2 cup milk (125 ml)
Instructions:

1. Melt butter in 8" (23 cm) square baking pan in oven. Tilt pan to coat bottom with butter.
2. Combine sugar and cinnamon. Toss apples with half of sugar/cinnamon mixture. Spread evenly in pan. Bake in preheated 425ºF (220ºC) oven 5 minutes. Sprinkle raisins over apples.
3. Whisk eggs, flour, baking powder, and salt together in a bowl. Gradually add milk, whisking until smooth. Pour over cooked apples. Sprinkle with remaining sugar/cinnamon mixture. Bake in 425ºF (220ºC) oven 15-20 minutes, or until set and golden brown. Cut into 4 squares and serve immediately. Makes 4 servings.

Cottage Tips:
  1. Try replacing raisins with dried cranberries, cherries, or blueberries. Pears, peaches, or nectarines are also delicious in the clafoutis.
